In a bowl, whisk together the EVOO, white wine, lemon zest & juice, grated garlic, parsley, dried oregano, dried basil, red pepper flakes, along with a pinch of salt and a few cracks of black pepper.
Add your cubed chicken thighs, and season with salt & pepper. Mix until the chicken is fully coated then allow the chicken to marinate for 30-60 minutes (but no longer than 60).
In a sheet pan, mix together the panko, seasoned breadcrumbs, and pecorino. Then in a separate bowl, mix together the melted butter, grated garlic, chopped parsley, and a pinch of salt. Keep the butter warm, and set aside until the chicken is cooked.
Add the chicken to the sheet pan with the breadcrumb mixture, and toss until the chicken is fully coated. Then transfer the chicken to skewers.
Heat a grill over medium to medium-high heat (about 400º). Once hot, generously oil the grates and cook the chicken for 12-15 minutes, turning occasionally, or until chicken reaches desired temperature.
Once done, top with fresh parsley and the melted butter mixture.
