Chicken Spiedini is an Italian-American grilled favorite with skewered chicken and plenty of char. It is practical enough for a weeknight without tasting like a compromise. It is especially good when summer cooking is in full swing. I grew up around food that was generous, unfussy and meant to be shared, and that is still how I like to cook. The goal is not to turn dinner into a production. It is to make something you are excited to eat and proud to put in the middle of the table. Cook it the way you like it, pour something good and do not overthink the rest. Mangia! If you need a chicken recipe with more personality than the usual weeknight fallback, Chicken Spiedini belongs in the rotation.

Grilled Chicken Spiedini
Ingredients
- 2 lbs Chicken Thighs cut into cubes
- 1/2 cup EVOO
- 1/4 cup White Wine
- 1 lemon zested
- 1/2 lemon juiced
- 4 garlic cloves grated
- 2 tbsp parsley finely chopped
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1/2 tsp red pepper flakes
- Salt & Pepper
- 1/2 cup panko
- 1/2 cup seasoned breadcrumbs
- 1/4 cup pecorino
- 4 tbsp butter melted
- 2 garlic cloves grated
- 1 tbsp chopped parsley more as needed
- Pinch of salt
Instructions
- In a bowl, whisk together the EVOO, white wine, lemon zest & juice, grated garlic, parsley, dried oregano, dried basil, red pepper flakes, along with a pinch of salt and a few cracks of black pepper.
- Add your cubed chicken thighs, and season with salt & pepper. Mix until the chicken is fully coated then allow the chicken to marinate for 30-60 minutes (but no longer than 60).
- In a sheet pan, mix together the panko, seasoned breadcrumbs, and pecorino. Then in a separate bowl, mix together the melted butter, grated garlic, chopped parsley, and a pinch of salt. Keep the butter warm, and set aside until the chicken is cooked.
- Add the chicken to the sheet pan with the breadcrumb mixture, and toss until the chicken is fully coated. Then transfer the chicken to skewers.
- Heat a grill over medium to medium-high heat (about 400º). Once hot, generously oil the grates and cook the chicken for 12-15 minutes, turning occasionally, or until chicken reaches desired temperature.
- Once done, top with fresh parsley and the melted butter mixture.
