If you grew up in an Italian-American household, there’s a good chance you’ve had potato and eggs at some point. And if you haven’t, you’re missing out.

This was an old-school staple in my house growing up. My mom made potato and eggs all the time, usually for lunch, although having it for dinner or breakfast wasn’t out of the question either.

I don’t know exactly why this dish became such a staple in Italian-American households, especially around New York, but I’m glad it did. Because sometimes the simplest meals are the ones that hit the hardest.

For my version, I thinly slice Yukon Gold potatoes and shallow-fry them in olive oil until they’re crispy. Then I turn off the heat, add whisked eggs, and continuously stir everything together until the eggs are cooked exactly how I like them.

A little freshly grated Pecorino, salt, and black pepper finish everything off.

And while you can eat potato and eggs straight from the skillet, I think the best way to enjoy them is stuffed into seeded semolina bread with a couple of roasted Italian long hots.

It’s simple, filling, and one of those meals that instantly takes me back to growing up.

Why You’ll Love This Potato and Eggs Sandwich

There are certain meals that don’t need a long ingredient list or a complicated cooking process to be good. Potato and eggs is one of them.

Growing up, my mom made this all the time. It was usually something we’d have for lunch, but every once in a while, it also made an appearance at dinner or even breakfast.

What I love about it is the combination of crispy potatoes and eggs. I slice the Yukon Gold potato thin, shallow-fry it in olive oil, and then add the eggs directly to the skillet. The potatoes keep their golden edges while the eggs cook around them.

And of course, I finish everything with Pecorino. It adds just enough salty, sharp flavor without taking away from the potatoes and eggs.

But for me, the sandwich is what really makes this meal. Stuff the potatoes and eggs into seeded semolina bread, add some roasted Italian long hots, and you’ve got one of my favorite old-school Italian-American lunches.

It’s affordable, filling, and made with ingredients you probably already have in the kitchen. More importantly, it’s the kind of meal that reminds me of home.

Ingredients You’ll Need

This recipe doesn’t require many ingredients, but the way you prepare the potatoes and eggs makes a difference.

Yukon Gold Potato: I use one medium Yukon Gold potato, peeled and sliced approximately ⅛ inch thick. Yukon Golds hold their shape well while developing golden, crispy edges in the skillet.

Eggs: Six large eggs make up the other half of this dish. I whisk them before adding them to the potatoes so they cook evenly once they hit the pan.

Italian Long Hots: I roast two or three Italian long hot peppers with olive oil and salt until charred. After roasting, I remove the seeds and add the peppers to the sandwich. Their heat can vary, so adjust the amount to your preference.

Pecorino Cheese: Freshly grated Pecorino adds a sharp, salty finish. I add it after the eggs are cooked and adjust the amount to taste.

Salt and Black Pepper: Season the potatoes before frying, then taste and adjust the finished eggs.

Olive Oil: I use a liberal amount of olive oil to shallow-fry the potatoes. It helps them develop their golden exterior and adds flavor to the dish.

Seeded Semolina Bread: This is how I like to serve potato and eggs. The seeded crust and sturdy bread hold up well to the filling. I remove some of the soft center to make room for everything.

Optional Condiments: Add whatever you like to the finished sandwich, although I think the potatoes, eggs, Pecorino, and roasted long hots bring plenty of flavor on their own. But sometimes I’ll add a touch of ketchup.

How to Make Potato and Eggs

The process is simple, but I like paying attention to two things: getting the potatoes crispy and making sure the eggs don’t overcook.

Step 1: Roast the Italian Long Hots

Start by placing the Italian long hots on a baking sheet.

Drizzle with olive oil and season generously with salt. Roast or broil until the peppers become charred, turning as needed.

Set them aside to cool enough to handle, then remove the seeds.

Step 2: Prepare the Potatoes

Peel the Yukon Gold potato and slice it in half lengthwise.

Then thinly slice each half crosswise into pieces about ⅛ inch thick.

If you want, you can soak the sliced potatoes in cold water to remove some of the surface starch. This step is optional, but if you do it, make sure to dry the potatoes completely before frying.

Step 3: Shallow-Fry the Potatoes

Heat a nonstick skillet over medium heat and add a liberal amount of olive oil.

Arrange the potato slices evenly in the skillet and season with salt and black pepper.

Shallow-fry until the potatoes are golden and crispy, turning as needed so they cook evenly.

Once they’re done, carefully remove any excess oil with a paper towel.

Step 4: Add the Eggs

Turn off the heat.

Pour the whisked eggs directly into the skillet with the crispy potatoes.

Continuously stir the eggs and potatoes as the residual heat cooks the eggs.

Keep stirring until the eggs reach your preferred texture. If the skillet cools before the eggs finish cooking, briefly return it to low heat.

Season with freshly grated Pecorino, salt, and black pepper to taste.

Step 5: Assemble the Sandwich

Slice your seeded semolina bread and remove some of the soft center to make room for the filling.

Add the potato and eggs mixture to the bread, followed by the roasted Italian long hots.

Finish with any condiments you like, close the sandwich, and enjoy.

For me, this is the best way to eat potato and eggs.

Tips

Slice the potatoes thinly. I aim for approximately ⅛-inch-thick slices. This helps the potatoes cook evenly and develop crispy edges without taking too long.

Dry the potatoes completely. If you choose to soak the potatoes in cold water, thoroughly dry them before frying. Excess moisture can cause the oil to splatter and prevent the potatoes from crisping properly.

Don’t overcrowd the skillet. Spread the potatoes evenly so they have enough contact with the pan to brown. If your skillet is too small, cook them in batches.

Remove excess oil before adding the eggs. You want enough olive oil to shallow-fry the potatoes, but you don’t need all that oil when cooking the eggs.

Turn off the heat before adding the eggs. This is one of the most important steps in my method. The residual heat allows the eggs to cook more gently while you continuously stir.

Add Pecorino at the end. I like finishing the potatoes and eggs with freshly grated Pecorino, then tasting and adjusting the salt and black pepper.

Don’t skip the Italian long hots. If you like a little heat, roasted Italian long hots are one of my favorite additions to this sandwich. They bring a nice contrast to the potatoes and eggs.

Rocco’s Pro Tip

Once the potatoes are crispy, turn off the heat before pouring in the whisked eggs. Stir continuously and let the residual heat cook them to your preferred texture. This gives you much more control than cooking the eggs over direct medium heat.

Frequently Asked Questions

What is potato and eggs?

Potato and eggs is a simple dish made by cooking potatoes and eggs together in a skillet. It’s a familiar staple in many Italian-American households, often served on Italian bread as a sandwich.

Is potato and eggs an Italian-American dish?

Potatoes and eggs are cooked together in different forms throughout Italian cuisine. The sandwich version is especially familiar in Italian-American communities, including around New York, although it isn’t exclusive to the area.

Do I need to soak the potatoes before frying?

No. Soaking is optional, and in fact, most of the time I don’t soak the potatoes. But it helps remove some surface starch, but you can skip it. If you soak the potatoes, make sure they’re completely dry before frying.

Why do you turn the heat off before adding the eggs?

I turn off the heat so the residual warmth from the skillet cooks the eggs more gently. It gives me more control over their texture while I continuously stir them with the potatoes.

What are Italian long hots?

Italian long hots are long, thin peppers commonly roasted or fried and served with Italian-American dishes. Their heat can vary from relatively mild to quite spicy.

One of Those Meals That Takes Me Right Back Home

Growing up, potato and eggs was one of those meals my mom made all the time.

Most of the time, it was lunch. But every once in a while, we’d have it for dinner or even breakfast on the weekends. And I never complained.

It’s funny because I feel like potato and eggs is one of those dishes that so many people from Italian-American households, especially around New York, grew up eating. I couldn’t tell you exactly why it became such a staple, but if you know, you know.

It’s nothing complicated. Just potatoes, eggs, olive oil, a little Pecorino, and some salt and pepper.

But put it all on a piece of seeded semolina bread with a couple of roasted Italian long hots, and I’m telling you, it just hits.

This is the kind of food I grew up on, and it’s exactly why I love sharing these old-school Italian-American recipes.
