This Tuscan White Bean Soup is one of my favorite things to make when the weather starts getting colder. It’s hearty, comforting, and packed with cannellini beans, tomatoes, kale, cabbage, and plenty of vegetables.

I especially love making a big pot of this soup during late fall and winter. It’s become a regular part of my weekly rotation because it’s easy to prepare, makes plenty of leftovers, and always hits the spot when I’m craving something warm and homemade.

My favorite trick is blending one can of cannellini beans to create a rich, creamy broth without adding any cream. A little tomato paste, fennel pollen, and coriander give the soup extra depth, while freshly grated Parmigiano Reggiano brings everything together.

Serve it with some crusty Italian bread, and you’ve got a meal I could happily eat all week.

What is Tuscan White Bean Soup

Tuscan white bean soup is an Italian-inspired soup that features creamy white beans, vegetables, and a flavorful broth.

Cannellini beans are especially popular in Tuscan cooking, and they work beautifully in soups because of their soft, creamy texture.

My version combines cannellini beans with carrots, celery, onion, tomatoes, kale, and cabbage.

I also add fennel pollen and ground coriander to give the broth a little extra complexity.

The result is a hearty, vegetable-packed soup that’s comforting without feeling overly heavy.

Why You’ll Love This Tuscan White Bean Soup

There are a few reasons this recipe stays in my rotation throughout the colder months.

First, it’s made with simple ingredients. Canned cannellini beans, tomatoes, broth, and a few vegetables create a really satisfying soup.

Second, it makes a large batch. I love making soup at the beginning of the week, and this one gives me plenty of leftovers for easy lunches or dinners.

Finally, the broth is naturally creamy.

By blending one can of cannellini beans, you get a rich texture without adding heavy cream.

It’s an easy way to make a comforting Italian soup with ingredients you can keep on hand.

Ingredients You’ll Need

Cannellini Beans

Cannellini beans are the star of this soup.

I use four cans in total. Three stay whole, while I blend the fourth can to create a naturally creamy broth.

The whole beans add texture and make the soup filling, while the blended beans give it body.

Onion, Carrots, Celery, and Garlic

These vegetables create the aromatic foundation of the soup.

I start by sautéing the onion, carrots, and celery in olive oil until they soften.

Then I add the garlic with the tomato paste and spices to build even more flavor.

Tomato Paste and Whole Tomatoes

I use both tomato paste and whole peeled tomatoes.

Cooking the tomato paste until it turns a deeper red develops a richer flavor.

The crushed tomatoes add body, acidity, and a little sweetness to the broth.

Fennel Pollen, Coriander, and Red Pepper Flakes

This is where my version gets a little different.

Fennel pollen brings a delicate, aromatic flavor that works beautifully with white beans.

Ground coriander adds a subtle citrusy warmth, while red pepper flakes provide a little background heat.

Together, they give the soup more depth without overpowering the vegetables.

Kale and Cabbage

I love using both kale and cabbage in this soup.

The kale adds color and an earthy flavor, while the cabbage softens into the broth and makes the soup even heartier.

I add both toward the end of cooking so I can control their texture.

Broth, Olive Oil, and Parmigiano Reggiano

Vegetable or chicken broth forms the base of the soup.

Extra virgin olive oil adds richness, and freshly grated Parmigiano Reggiano provides the perfect finishing touch.

I also love serving this soup with crusty Italian bread for dipping.

The Secret to Creamy White Bean Soup

One of my favorite things about this recipe is how creamy the broth becomes without using heavy cream.

The trick is blending one can of cannellini beans.

Instead of adding all four cans whole, I blend one portion until smooth and stir it into the vegetables and tomato paste.

Once I add the broth, the bean purée gives the soup a thicker, creamier consistency.

The remaining beans stay whole, so you still get plenty of texture in every spoonful.

It’s a simple technique that makes a big difference in the finished soup.

How to Make Tuscan White Bean Soup

1. Sauté the Vegetables

Heat a large pot over medium heat and add a generous drizzle of extra virgin olive oil.

Add the diced onion, carrots, and celery with a pinch of salt.

Cook until the vegetables begin to soften, stirring occasionally.

This creates the flavor base for the soup.

2. Toast the Tomato Paste and Spices

Add the minced garlic, tomato paste, fennel pollen, ground coriander, and red pepper flakes.

Cook for approximately 2–3 minutes, stirring frequently.

You want the garlic to become fragrant and the tomato paste to deepen in color.

This step adds a lot of flavor to the broth.

3. Add the Cannellini Beans and Tomatoes

Stir the blended cannellini beans into the vegetables until everything combines.

Then add the three cans of whole cannellini beans and the hand-crushed tomatoes.

Season lightly with salt and stir everything together.

4. Add the Broth and Simmer

Pour in 6 cups of vegetable or chicken broth.

Bring the soup to a gentle simmer, cover the pot, and cook for approximately 30–40 minutes.

The vegetables will continue softening while the beans and tomatoes flavor the broth.

If you prefer a thinner soup, add more broth as needed.

5. Add the Kale and Cabbage

Stir in the chopped kale and shredded cabbage.

Continue cooking for another 10–15 minutes, until the greens soften and the cabbage reaches your preferred tenderness.

Taste the soup and adjust with salt and freshly cracked black pepper.

6. Finish with Parmigiano and Olive Oil

Ladle the soup into bowls and finish with freshly grated Parmigiano Reggiano.

Add a drizzle of good extra virgin olive oil and serve with crusty Italian bread.

Frequently Asked Questions

What beans are best for Tuscan white bean soup?

Cannellini beans are my favorite choice. They have a creamy texture and mild flavor that works beautifully with tomatoes, vegetables, and greens.

How do you make white bean soup creamy without cream?

Blend one can of cannellini beans until smooth and stir it into the soup base. The blended beans naturally thicken the broth without adding dairy.

Can I use dried cannellini beans instead of canned?

Yes, but you’ll need to soak and fully cook the dried beans before using them in this recipe. The listed cooking time assumes you’re starting with canned beans.

Can I substitute spinach for kale?

Yes. Spinach works well, but it cooks much faster than kale. Add it during the final few minutes so it wilts without becoming overly soft.

Why is my white bean soup too thick?

The blended cannellini beans naturally thicken the broth, especially as the soup cools. Add more water or broth until you reach your preferred consistency.
