There are some dishes that make sense the second they hit the table, and Grilled Chicken Cutlets is one of them. This is thin chicken cutlets cooked quickly over the grill for an endlessly useful summer staple. It is practical enough for a weeknight without tasting like a compromise. It is especially good when summer cooking is in full swing. For me, this is the sweet spot: familiar enough to feel like comfort food, but good enough that you are already thinking about the next bite. That is the kind of cooking I want this site to be full of — approachable, full of flavor and never precious about itself. Make it, tweak it to your taste and have a little fun with it. That is the whole point.

Grilled Chicken Cutlets
Ingredients
- 2 lbs Chicken Breast sliced thin
- 1/2 cup EVOO
- 1/4 cup White Wine
- 1 lemon zested
- 1/2 lemon juiced
- 4 garlic cloves grated
- 2 tbsp parsley finely chopped
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1/2 tsp red pepper flakes
- Salt & Pepper
- 1/2 cup panko
- 1/2 cup seasoned breadcrumbs
- 1/4 cup pecorino
Instructions
- In a bowl, whisk together the EVOO, white wine, lemon zest & juice, grated garlic, parsley, dried oregano, dried basil, red pepper flakes, along with a pinch of salt and a few cracks of black pepper.
- Add your sliced chicken breast, and season with salt & pepper. Mix until the chicken is fully coated then allow the chicken to marinate for 30-60 minutes (but no longer than 60).
- In a sheet pan, mix together the panko, seasoned breadcrumbs, and pecorino. Then in a separate bowl, mix together the melted butter, grated garlic, chopped parsley, and a pinch of salt.
- Add the chicken to the sheet pan with the breadcrumb mixture, and toss until the chicken is fully coated.
- Heat a grill over medium to medium-high heat (about 400º). Once hot, generously oil the grates and cook the chicken for 12-15 minutes, turning occasionally, or until chicken reaches desired temperature.
- Once done, top with fresh parsley and enjoy.
