In a bowl, whisk together the EVOO, white wine, lemon zest & juice, grated garlic, parsley, dried oregano, dried basil, red pepper flakes, along with a pinch of salt and a few cracks of black pepper.
Add your sliced chicken breast, and season with salt & pepper. Mix until the chicken is fully coated then allow the chicken to marinate for 30-60 minutes (but no longer than 60).
In a sheet pan, mix together the panko, seasoned breadcrumbs, and pecorino. Then in a separate bowl, mix together the melted butter, grated garlic, chopped parsley, and a pinch of salt.
Add the chicken to the sheet pan with the breadcrumb mixture, and toss until the chicken is fully coated.
Heat a grill over medium to medium-high heat (about 400º). Once hot, generously oil the grates and cook the chicken for 12-15 minutes, turning occasionally, or until chicken reaches desired temperature.
Once done, top with fresh parsley and enjoy.
