What is Chicken Piccata?
Chicken Piccata is a popular Italian-American dish that typically features thin chicken cutlets with a lemon, butter, and caper sauce.
Many versions use a light flour coating before pan-frying the chicken.
My version takes a slightly different approach.
Instead of dredging the chicken in flour, I coat the cutlets in seasoned breadcrumbs and fry them until golden brown and crispy.
Then I make a classic-style piccata sauce with garlic, capers, white wine, lemon juice, chicken broth, and cold butter.
The result has all the bright, savory flavors you expect from Chicken Piccata, but with the extra crunch of a breaded chicken cutlet.
Why You’ll Love This Crispy Chicken Piccata
There are a few reasons this recipe deserves a spot in your dinner rotation.
First, the crispy breading adds incredible texture. The contrast between the golden chicken and tangy lemon butter sauce is what makes this version special.
Second, the sauce comes together in the same skillet. The garlic, capers, white wine, and lemon create a rich, flavorful finish.
Finally, this dish works for almost any occasion.
You can make it for a weeknight dinner, serve it when family comes over, or bring those classic Italian-American restaurant vibes into your own kitchen.
Ingredients You’ll Need
Chicken Cutlets
I use thinly sliced chicken breasts for this recipe.
Thin cutlets cook quickly and develop a beautiful golden crust without drying out.
I season the chicken with salt and pepper before breading it.
Eggs and Seasoned Breadcrumbs
Instead of using flour, I dip the chicken into beaten eggs and then coat it with seasoned breadcrumbs.
The breadcrumbs create a crispier, more substantial crust.
I love how that crust contrasts with the bright piccata sauce.
Garlic and Capers
Garlic creates the aromatic base of the sauce.
Capers add a briny, salty flavor that balances the richness of the butter.
I rinse the capers before adding them to the skillet so they don’t overpower the sauce.
White Wine and Chicken Broth
Dry white wine brings acidity and depth to the sauce.
I reduce the wine before adding chicken broth and lemon juice.
This helps concentrate the flavor and creates a balanced base for the butter.
Fresh Lemon Juice
Lemon is one of the defining flavors in Chicken Piccata.
I use fresh lemon juice for a bright, tangy sauce that cuts through the richness of the fried chicken.
Cold Butter
Cold butter is the key to finishing the sauce.
Instead of simply melting butter into the skillet, I remove the sauce from the heat and whisk in the cold butter.
This creates a smooth, glossy emulsion that coats the chicken beautifully.
Fresh Parsley
I finish the chicken with chopped fresh parsley.
It adds color, freshness, and a little contrast to the rich lemon butter sauce.
Why I Bread My Chicken Piccata
Traditional Chicken Piccata often starts with lightly flour-dredged chicken.
But I love the texture of a properly breaded Italian chicken cutlet.
That’s why I use an egg wash and seasoned breadcrumbs instead.
The breading creates a golden, crispy crust that holds up beautifully when you spoon the piccata sauce over the top.
And because I don’t simmer the chicken in the sauce, the breading stays crisp instead of turning soggy.
It’s a small change that makes a big difference in the finished dish.
How to Make Crispy Chicken Piccata
1. Prepare the Chicken Cutlets
Start by slicing the chicken breasts horizontally into thin cutlets.
Season both sides with salt and freshly cracked black pepper.
If any pieces are noticeably thicker, gently pound them to create an even thickness.
This helps the chicken cook evenly.
2. Bread the Chicken
Set up two shallow bowls.
Add beaten eggs to the first bowl and seasoned breadcrumbs to the second.
Dip each chicken cutlet into the eggs, letting any excess drip off.
Then press the chicken into the breadcrumbs until both sides have an even coating.
3. Fry Until Golden and Crispy
Heat a large skillet over medium heat and add enough oil for shallow frying.
Carefully add the breaded chicken, working in batches if needed.
Cook for approximately 3 minutes per side, until the coating turns golden brown and the chicken reaches 165°F internally.
Transfer the cooked cutlets to a wire rack while you prepare the sauce.
4. Sauté the Garlic and Capers
Carefully remove the excess frying oil from the skillet.
Add a fresh drizzle of extra virgin olive oil.
Then add the minced garlic and rinsed capers.
Cook for approximately 1–2 minutes, stirring frequently, until the garlic becomes fragrant.
5. Deglaze with White Wine
Pour in the dry white wine and scrape the bottom of the skillet to release the flavorful browned bits.
Let the wine simmer until it reduces almost completely.
This step concentrates the flavor before you add the remaining liquids.
6. Reduce the Piccata Sauce
Add the fresh lemon juice and chicken broth.
Bring everything to a gentle simmer and cook for approximately 5–10 minutes.
The sauce should reduce and develop a more concentrated flavor.
You want enough liquid to spoon over the chicken without making the sauce watery.
7. Finish with Cold Butter
Remove the skillet from the heat.
Add the cold butter a little at a time, whisking or swirling the pan until it melts into the sauce.
This creates a smooth, glossy lemon butter sauce.
Taste and adjust the salt as needed.
8. Plate Without Losing the Crunch
Arrange the crispy chicken cutlets on a platter or individual plates.
Spoon the piccata sauce over the chicken immediately before serving.
Finish with freshly chopped parsley.
And whatever you do, don’t put the chicken back into the sauce.
That’s how you keep the breading crispy.
Tips

- Use seasoned breadcrumbs from my Chicken Cutlet Recipe
- Don’t overcrowd the skillet
- Keep the chicken on a wire rack and allow excess oil to drain

Frequently Asked Questions
What is Chicken Piccata?
Chicken Piccata is a popular Italian-American dish featuring thin chicken cutlets and a lemon, butter, and caper sauce. My version uses seasoned breadcrumbs for an extra-crispy coating.
Is Chicken Piccata traditionally breaded?
Many classic versions use a light flour coating. I prefer seasoned breadcrumbs because they create a crispier crust and give the dish that Italian-American restaurant feel.
What wine is best for Chicken Piccata?
Use a dry white wine such as Pinot Grigio or Sauvignon Blanc. Avoid sweet wines, which can throw off the balance of the lemon butter sauce. But if you don’t feel like using wine, you can also replace the wine with additional chicken broth. Although the sauce will have a slightly different flavor.
How do you keep Chicken Piccata crispy?
Keep the fried chicken separate from the sauce. Spoon the warm piccata sauce over the cutlets immediately before serving instead of simmering the chicken in the skillet.
What should i serve with Chicken Piccata?
Pasta, roasted potatoes, sautéed greens, and simple salads all pair well with Chicken Piccata.
Bring the Red Sauce Joint Home
There’s something about walking into a classic Italian-American restaurant and ordering a big plate of chicken with a buttery, lemony sauce that never gets old. And that’s exactly the kind of feeling I want when I make this Chicken Piccata at home.
I like doing mine a little differently by breading the chicken cutlets instead of just dredging them in flour. You get that golden, crispy crust, and when you spoon the lemon, white wine, caper, and butter sauce over the top, it’s incredible. The one thing I’ll never do is put the chicken back into the sauce. I spent all that time getting it crispy, and I’m not about to ruin it. Whether I’m cooking for family, friends, or just making dinner during the week, this is one of those dishes that always hits the spot.

- Parsley as needed
- Salt to taste
- 4 tbsp butter cold
