Total Time2 hours hrs
Servings: 4 people
- 1 lb calamari cleaned and sliced into 3/4 inch pieces
- 1/2 cup of buttermilk or regular milk
- 1/2 tsp salt
- 1 1/2 cup flour
- 1/2 cup corn starch
- 1 tsp baking powder
Marinate the calamari in the milk and salt for 30 minutes, up to 2 hours
Mix the flour, corn starch and baking powder together.
Add half the calamari to the flour mixture and mix until fully coated. Then transfer the calamari to a sheet tray lined with a wire rack (or colander) so excess flour falls off.
Allow the calamari to rest in the fridge for at least 30 minutes so the flour hydrates.
Heat veggie oil to 365-375º, in batches, carefully add the calamari and fry for 3-4 minutes or until golden brown and crispy. Once done, remove and immediately season with salt.
