For the Meatballs
- 1 lb ground chicken
- 3 scallion whites plus some greens, finely chopped
- 2 to 3 tbsp chopped parsley
- 2 garlic cloves grated
- 1/2 cup shredded mozzarella
- 1/3 cup panko breadcrumbs
- 1 egg
- 1/2 tsp cayenne pepper powder
- 1 tsp salt
- Your favorite buffalo sauce about 1 cup
For the Ranch
- 1/2 cup Mayo
- 1/2 cup sour cream
- 1/2 to 3/4 cup butter milk
- 2 to 3 tablespoons each of chopped chives parsley, and dill
- 1 tsp garlic powder
- 1 to 2 tsp onion powder
- Salt
Preheat your oven to 425°.
In a large bowl, add all the meatball ingredients using only 2 tbsp of buffalo sauce (reserve the rest of the sauce for the next step). Mic until combined, then roll into mini meatballs (about 18-20). Transfer to a sheet tray and bake for 10 minutes to firm up.
Transfer the meatballs to a crockpot and pour in 1/2 cup to 3/4 cup of your favorite buffalo sauce. Mix until the meatballs are fully coated and then cook on low for 2 hours.
While the meatballs are cooking, add all the ranch ingredients to a bowl. Mix until combined, then taste, and adjust seasoning as needed.
Remove the meatballs, plate and garnish with sliced green onions and a drizzle of more buffalo sauce.
