This fall harvest salad brings together some of my favorite seasonal ingredients in one big, colorful bowl. You’ve got tender roasted beets, crisp apples, shredded kale, crunchy walnuts, sweet pomegranate seeds, and plenty of crumbled feta, all tossed in a homemade honey-Dijon balsamic dressing.

It’s the perfect balance of sweet, savory, earthy, and tangy, with a little crunch in every bite. I especially love serving this during the fall when I’m looking for something fresh to balance out all those rich, comforting meals. And if you’re putting together a Thanksgiving menu, this is one of those sides that deserves a spot on the table.

Why You’ll Love This Fall Harvest Salad

What makes this salad so good is the combination of different flavors and textures.

The roasted beets bring an earthy sweetness, while the apples and radishes add a fresh crunch. Pomegranate seeds give you little bursts of sweetness, walnuts add richness, and the feta brings that salty, creamy bite that ties everything together.

And then there’s the dressing. Instead of using a store-bought vinaigrette, I make a simple balsamic dressing with Dijon mustard, honey, olive oil, and balsamic vinegar.

It’s tangy, slightly sweet, and works beautifully with the kale and roasted vegetables.

Ingredients You’ll Need

Kale: I use shredded kale as the base of this salad. Its sturdy leaves hold up well to the balsamic dressing, making it a great option when you’re preparing food for a gathering.

Roasted beets: Beets bring a natural earthy sweetness that works especially well with the tangy dressing and salty feta. I roast them until tender, let them cool, and then dice them into bite-sized pieces.

Apple: I like cutting the apple into thin matchsticks so you get a little crunch in every bite. A crisp apple variety works best here.

Radishes: Thinly sliced radishes add a peppery bite and another layer of crunch.

Walnuts: Chopped walnuts give the salad a rich, nutty flavor and some much-needed texture.

Pomegranate seeds: These add beautiful color and little bursts of sweet-tart flavor throughout the salad.

Feta: I love adding plenty of crumbled feta. Its salty, creamy flavor balances the sweetness of the beets, apples, and pomegranate.

Extra virgin olive oil, salt, and pepper: These simple ingredients season the vegetables and help bring everything together.

The Dressing!

I think a good dressing can make or break a salad, and this homemade balsamic vinaigrette is one of my favorites for fall.

It only takes a few ingredients:

  • Balsamic vinegar
  • Extra virgin olive oil
  • Dijon mustard
  • Honey
  • A pinch of salt

The Dijon mustard helps the dressing emulsify, while the honey balances the acidity of the balsamic vinegar.

I like making the dressing in a jar with a tight-fitting lid. Just add everything, shake vigorously until combined, and you’re good to go.

You can also blend the ingredients if you prefer a smoother, more thoroughly emulsified dressing.

How to Make Fall Harvest Salad

1. Roast the Beets

Preheat your oven to 400°F.

Cut the beets in half and season with olive oil, salt, and pepper. Wrap them in foil and roast for approximately 45–60 minutes, depending on their size, until tender when pierced with a fork.

Let the beets cool until they’re comfortable to handle, then dice them into bite-sized pieces.

2. Prepare the Salad Ingredients

While the beets roast, shred the kale, thinly slice the radishes, cut the apple into matchsticks, and chop the walnuts.

Measure out the pomegranate seeds and crumble the feta.

I like prepping everything before assembling so the salad comes together quickly once the beets are ready.

3. Make the Balsamic Dressing

Add the balsamic vinegar, olive oil, Dijon mustard, honey, and salt to a jar with a tight-fitting lid.

Shake vigorously until the dressing is well combined and emulsified.

Taste and adjust the seasoning as needed.

4. Assemble the Salad

In a large serving bowl, combine the shredded kale, roasted beets, radishes, apples, walnuts, and pomegranate seeds.

Add as much crumbled feta as you like. Personally, I’m not shy with the feta.

5. Dress and Serve

Pour some of the balsamic dressing over the salad and toss until everything is evenly coated.

Start with less dressing than you think you’ll need, then add more to taste. You want everything coated without leaving a pool of dressing at the bottom of the bowl.

Finish with additional salt, pepper, or feta if needed, and serve.

Why This is a great Thanksgiving Salad

Thanksgiving is all about rich, comforting dishes, but I always think it’s nice to have something fresh on the table.

This fall harvest salad is filled with seasonal ingredients, and its combination of earthy beets, crisp apples, and tangy balsamic dressing makes it a refreshing contrast to turkey, stuffing, mashed potatoes, and all the other holiday favorites.

It’s also colorful enough to look beautiful served in a large bowl or platter, making it a great addition to a Thanksgiving spread.

Frequently Asked Questions

Can I use spinach instead of kale?

Yes, but spinach is much more delicate and won’t hold up to the dressing as well. If you’re using spinach, I recommend dressing the salad immediately before serving. But you can also swap for another leafy green.

Do I have to roast the beets?

Roasting brings out the beets’ natural sweetness, which is one of my favorite parts of this salad. You can use precooked beets to save time, but the flavor and texture may be slightly different.

Can I make this salad without feta?

Absolutely. You can leave it out or substitute another cheese, such as goat cheese, if you prefer.

What apples work best for fall harvest salads?

I recommend a crisp variety such as Honeycrisp, Pink Lady, or Granny Smith. Each brings a slightly different balance of sweetness and tartness.

Is this salad good for Thanksgiving?

Definitely. It’s a colorful, seasonal side dish that brings freshness and crunch to a table full of richer holiday foods.
